A colorless translucent crystalline or white particle or white crystalline powder, often containing one molecule of crystalline water, odorless, extremely acidic, soluble in water, alcohol, and ether. Its calcium salts are more soluble in cold water than hot water, and this property is often used to identify and separate citric acid. Anhydrous citric acid can be obtained by controlling the appropriate temperature during crystallization. The aqueous solution is acidic. It is slightly weathered in dry air and deliquescent in humid air. Decomposition above 175ºC releases water and carbon dioxide.

Anhydrous citric acid, C6H8O7, is a colorless translucent crystal or white particle or white crystalline powder, odorless, extremely acidic, soluble in water, alcohol, and ether. Anhydrous citric acid can be obtained by controlling the appropriate temperature during crystallization. The aqueous solution is acidic. It is slightly weathered in dry air and deliquescent in humid air. It is mainly used in food and beverage industry as sour agent, acidity regulator, seasoning agent, preservative and fresh-keeping agent. It is also used as an antioxidant, plasticizer and detergent in the chemical industry, cosmetics industry and washing industry.

Physicochemical properties: relative density 1.542, melting point 153ºC(water loss), refractive index 1.493-1.509, critical temperature of solution crystallization 36.6ºC(crystallization above 36.6ºC anhydrous citric acid, crystallization below 36.6ºC citric acid monohydrate).
